Sauce Ingredients
- 1 avocado
- 3 Tbs fresh parsley leaves, chopped
- 3 Tbs fresh cilantro leaves, chopped
- 1 garlic clove, finely diced
- 1 lime
- 2 Tbs avocado oil
- Salt and pepper
Sauce Instructions
Sauté the garlic clove with butter. Put the garlic, avocado, parsley, cilantro, lime juice, oil, salt, and pepper in food processor or blender and mix until you obtain a soft sauce. Reserve.
Pasta Ingredients
- 1 ½ lb raw, peeled, deveined, medium Pacific Lush shrimp
- 1 lb tagliatelle pasta
- 1 Shallot, chopped
- 3 Tbs of fresh cilantro. chopped
- 1 lemon zest
- 1 tsp paprika
- 2 Tbs avocado oil
- Salt and pepper
Pasta Instructions
Thaw shrimp and dry on a paper towel. Cook the tagliatelle following the instructions on package. In a bowl, mix oil, shallot, cilantro, lemon zest, paprika, and pepper. Add shrimp to the bowl. Heat a skillet over medium-high heat, add avocado oil and fry shrimp for 1-2 minutes on each side until the color changes; add salt and pepper. Remove shrimp from the skillet. Drain the pasta. Place pasta in the skillet, add the shrimp and sauce, and stir gently. Serve with a green salad and garlic bread. Enjoy!
